
Christmas Push Up Cakes
I know we have a little way to go before it is Christmas, but I am already getting excited. There are so many gorgeous new Christmas decorations in the shops and I am already thinking about all the delicious Christmas dishes and desserts I can cook for friends and family.
Although I love cooking I am always looking for good standby products to simplify my life and allow me to prepare luscious and pretty desserts which can be made easily in a heartbeat.
I have made push up cakes before, but for this story I have decided to give them a Christmas makeover!

Gingerbread and Cream Cheese Frosting
The dessert I have prepared uses a delicious gingerbread cake layered with fruit mince filling and topped with the new, ready-to-eat, PHILADELPHIA Cream Cheese Frosting. A deliciously creamy frosting with a hint of lemon that is so good I wanted to eat it straight from the tub.

Christmas Push Cakes
PHILADELPHIA Cream Cheese Frosting is a delicious new frosting which can be found in the refrigerator section of the supermarket. It tastes exactly as if you have made it yourself, and it is just so convenient. There are two flavours, the cream cheese frosting with a hint of lemon, which I have used here in this dessert, or the Cadbury Chocolate frosting which tastes just like liquid Cadbury’s chocolate. YUM!

Simply Heaven Cookbook Vol 3
Keeping with the Christmas spirit the lovely people from Philadelphia Cream Cheese have given me five copies of their scrumptious “Simply Heaven Vol 3” dessert cookbook to giveaway to readers. The cookbook is a collaboration between Philadelphia Cream Cheese and Cadbury’s Chocolate so these desserts really are heavenly.

Philly Cream Cheese Frosting

Gingerbread Cake
Ingredients:
- 1 cup SR Flour
- 3 t/s ground ginger
- ½ t/s bicarbonate soda
- ½ cup golden syrup
- 50gm candied ginger
- ½ cup brown sugar
- 1 egg
- 1 cup milk
- 90gm butter
- Orange zest
Filling:
- 2 x Philidelphia Cream Cheese Frosting
- 2 Tbs fruits mince
Method:
Prepare a Swiss roll tray and preheat the oven to 170 degrees.
Melt the butter, sugar and golden syrup in a saucepan with the chopped ginger. Remove from the heat when the sugar has dissolved.

Sugar, Golden Syrup and Ginger
In a large bowl combine the flour, bicarbonate soda, ginger and orange zest.

Making the Gingerbread Cake
Add the milk and egg to the flour mixture and combine.
Pour the butter and sugars into the batter and use a stick blend to beat the mixture.

Golden Syrup and Ginger
Pour the batter into the prepared tray and cook for 15mins or until the cake springs back to touch.

Gingerbread Cake
Remove the cake from the oven and allow it to cool.
Once the cake is cool enough to work with use a cylinder from one of the “Push up” container to cut circles from the cake. Reserve for later.

Rounds for Push Up Cakes
Combine one container of cream cheese frosting with the fruit mince to make the filling. Stir the mixture until smooth.

Philly Frosting with fruit Mince
Place the filling into a piping bag with a wide nozzle.
Place the other container of Philadelphia Cream Cheese frosting into another piping bag. This will be used for the final layer so use a fluted piping nozzle for a decorative effect.

Christmas Gingerbread Push-up Cake
Place one round of cake in the bottom of each Push Up container. Use the Piping bag with cream cheese and fruit mince filling to pipe a layer onto the cake rounds.
Add another layer of cake to all of the push up containers.
Repeat with another layer of frosting and fruit mince filling and then add another cake round.
Finish with a decorative swirl of plain cream cheese frosting.

Christmas Push Up Ginger Cake
Decorate the Push Up Cakes with Christmas stickers or ribbon. Refrigerate until required.
